HIYA SPECIALS!
As the weather is getting a bit more chilly, I’ve noticed everything I’m cooking or wanting to eat is basically comfort food. For the last few months I’ve been trying to lead a healthier lifestyle so thought I’d try out some beetroot brownies! I’ve wanted to make some for ages but never got round to it, but this weather gave me the boot up the bum. They’re perfect with a cup of tea or any hot bevvy and you can’t even taste the beetroot! Winner winner chicken dinner!

– INGREDIENTS –
* 3 Eggs
* 200g Caster Sugar
* 200g Dark Chocolate (Anything above 70%)
* 100g Plain Flour
* 3-4 Medium Sized Beets
* 25g Cocoa Powder
* Any little extras you’d like for the top!

– METHOD –
* Put the beetroot, chocolate and butter into a blender and blend until it resembles a paste! Don’t worry if it looks horrible or weird – its meant to!
* In a separate bowl, mixx your sugar and eggs until it turns fairly pale.
* Fold in your beetroot mix until its all mixed together.
* Add your cocoa powder and then your flour bit by bit, folding it in gently because you want as much air in the mixture as possible!
* Pour it into a grease papered tin and pop in the oven for 25 minutes at 180*C.
* Enjoy! And don’t feel too guilty about it 😉
