New Year’s Eve when you have kids can be a let down. Before kids you’d be out until the early hours dancing and having fun. But that all changes once our little ones come along. Let’s be honest. Families just aren’t really welcome anywhere and anyway, no-one wants to keep a grumpy toddler up until midnight. Getting a babysitter for a New Year’s Eve Party is nigh on impossible. The best thing to do is embrace it, stay in, invite friends round, cook the kids an early meal, play a few games with them and pop them to bed at the normal time. Then it’s adult time. We’ve curated a fun New Year’s Eve Playlist for you to listen to and we’ve got some easy foodie ideas from Iceland:
Blueberry NYE Cocktails
Take a handful of Iceland frozen blueberries, let them thaw slightly then muddle them (squish so the skins pop!) with a dessert spoon of icing sugar. Fill your glasses with clear fizz (eg Prosecco, lemonade or elderflower) leaving a 3cm gap at the top and add a teaspoon of the mixture, your glass will fizz up slightly. Voila, you have a fun Blueberry NYE cocktail. Works brilliantly with Iceland frozen raspberries, too.
Smoked Salmon Canapés
Grab a pack of the award winning Iceland Douglas Spruce Smoked Salmon and using scissors cut a strip and fold it into a whirl shape (pictured). Make three slices of toast and use a small star cookie cutter to press out star shapes. You can also cut thin slices of french bread and toast them. Once cool, spread with a little cream cheese and top with your smoked salmon whirl. Add a twist of black pepper, a sprinkle of fresh dill if you like and serve with lemon wedges.
