A fresh and colourful summer salad recipe made with giant cous cous, mozzarella, cherry tomatoes and basil.

Ingredients:
200g / 7oz giant cous cous
1 vegetable stock cube
125g / 4oz mozzarella
10-15 cherry tomatoes
handful of fresh basil
2 tbsp olive oil
