Want to get veg into your kids without them knowing? These delicious chocolate muffins make great after school or nursery snacks and best of all they are packed with hidden healthy goodness.
1 large egg
125ml vegetable oil
3 tbsp cocoa powder
1 tsp vanilla extract
125g grated courgette
200g plain flour
100g chocolate chips
1/2 tsp bicarbonate of soda
1/4 tsp baking powder
1. Preheat oven to 180c. Line a 12 cup muffin tin with paper cases.
2. In a large bowl beat the eggs with an electric whisk. Beat in the sugar and oil then add the cocoa, vanilla, courgette and stir well with a spoon.
3. Stir in the flour, bicarbonate of soda and baking powder and mix until all the ingredients are well combined. Add the chocolate chips and stir one final time.
4. Pour batter into prepared muffin tins filling 3/4 of the way full. Bake in the oven 20 – 25 minutes. 5. Remove from muffins from the tin and allow them to cool on a wire rack.
