HOW TO BAKE A Royal Wedding Lemon Elderflower Cake | Quick and Easy with Kids! Prince Harry and Meghan Markle are getting married at Windsor Castle on 19th May 2018 and they’ve chosen Claire Ptak of Violet Bakery, London to make their royal wedding cake! Harry and Meghan have chosen a Lemon and Elderflower Sponge cake with buttercream and fresh flowers. Sponge:

200g self-raising flour
200g caster sugar
200g unsalted butter
4 eggs
1 tbsp. elderflower cordial
Zest of 1 lemon

Sugar Syrup:

Juice of 1 lemon
1 tbsp. elderflower cordial
50g granulated sugar

Buttercream:

150g unsalted butter
300g icing sugar
1 tbsp. elderflower cordial

Bake at 160 degrees C for 25-35 minutes
I used one 8 inch round cake tin, but you can vary the recipe and use a 6 or 10 inch tin. Just keep your flour, sugar and butter quantities for the batter consistent.
