Portuguese BBQ Chicken Recipe – Cookalong

Just had to share one of my favourite recipes with you, slightly adapted from the book Cozinhar, Celebrar e Partilhar by Joana Roque, I couldn’t find an original link online to her recipe but someone has done it so link is bellow (in Portuguese).

For those of you who don’t read Portuguese, here is the recipe:
Portuguese BBQ Chicken – Frango de Churrasco

Ingredients for 4 people:
1 whole chicken hopscotched or a mix of drumsticks and chicken thighs
Potatoes enough for 4 people
1St sauce
2 garlic cloves
1 tbsp of olive oil
Salt to taste
1 tbsp of paprika
1 tsp of piripiri or chilli flakes
½ lemon

2nd sauce
50 ml of olive oil
½ lemon
1 tsp of piripiri or chilli flakes
Salt and Pepper to taste
2 garlic cloves
1 bayleaf

Method:
Pre heat the oven to 200 degrees.
Mix together in a bowl all the ingredients for the 1st sauce.
In another bowl mix together all the ingredients for the 2nd sauce.
Peel & dice the potatoes and spread them evenly at the bottom of a casserole dish (you might want to use spray oil to prevent sticking), put on top the meat rack or use a metallic cake cooling rack, and add the chicken on top.
With a silicone brush the chicken with the 1st sauce and place in the oven.
After ½ hour take dish out and brush with the 2nd sauce on both sides of the chicken.
Do this every half an hour until the chicken and potatoes are cooked.
All the juice and sauces from the chicken will drip on to the potatoes bellow making them super tasty.

Traditionally served with plain rice but I prefer serving it with a salad.
