Asparagus, pea and mint risotto (serves 4 i half this for 2 people)
1.5 litres boiling vegetable stock
low calorie cooking spray
1 onion – finely chopped
2 garlic gloves – crushed
350g arborio rice
200g asparagus tips
200g frozen peas
handful of fresh mint
4 TBSP PARMESAN OPTIONAL
Pour the stock into a saucepan over a low heat and leave it to simmer gently
Spray a heavy based no stick pan with low calorie cooking spray and place over a medium heat. Add the onion and cook for 10 minutes or until softened. Add the garlic and rice and stir fry for 1 minute to coat the rice well. Stir in the asparagus and peas.
Add a couple of ladlefuls of hot stock and cook until the stock is absorbed, stirring continuously. Continue adding stock, cooking and stirring in this way for 20-25 minutes or until the rice is just cooked.
