(Makes enough pizza sauce for 2-3 pizzas)


1 x 400g tin of good quality chopped/plum tomatoes squished up with your hand
good quality olive oil
1 tsp balsamic vinegar
3 heaped tbsps of dried mixed herbs
one sprig of fresh thyme (optional)
a couple of cloves of garlic, chopped (optional)
a handful of freshly chopped basil leaves
sea salt
freshly ground black pepper


Heat a couple of glugs of olive oil in a pan over medium heat. Add the garlic if using. Then pour in the tomatoes, vinegar, just over 1/2 tsp seas salt and black pepper, the mixed herbs and thyme. Mix well and leave to simmer for 15 minutes (longer if you have time). Add the basil leaves just before spooning the sauce onto your pizza.

This recipe will give you a rich marinara-ey sauce. If you want a fresh tomato taste then blitz all the ingredients except the basil leaves in a food processor without cooking and use immediately.
